Peanut Butter Cupcakes!!!

Just about every Friday I make dinner and a dessert. But this past Friday was the Game Night, so I made dinner and a dessert today (Sunday)!! I made Peanut Butter Cupcakes for the dessert! I haven't tried one yet (well I did try some of the batter and some frosting hehe) so I can't tell you how they were! But anyway, here are some pictures of some of the cupcakes that I made and here is the recipe for them!!! :)

                                                             

                               Peanut Butter Cupcakes
           

                                                      

1 3/4 c. all purpose flour

3/4 c. sugar

1/4 c. shortening

3/4 tsp. vanilla extract

2 lg. eggs

1 c. milk

1/2 c. peanut butter

1 tbsp. baking powder

1/2 tsp. salt

At least 2 hours before serving: Preheat oven to 350 degrees. Grease 24 (2 1/2 ") muffin pan cups. Measure all ingredients into large bowl. Mix at low speed until well blended. Increase speed to high heat 2 minutes. Spoon batter into cups. Bake 18-20 minutes or until toothpick inserted into center of cupcake comes out clean. Cool in pans on wire racks 10 minutes. Remove from pans and cool completely. Frost when cool, chocolate frosting goes good on these. Makes 2 dozen cupcakes.

Rosie!!! :)

We only have one goat right now, Rosie! Rosie and her brother Sonny were born not this winter but a couple of winters ago. Their mother, Mandy, was a Nubian and their father, who was someone else's black buck, was a Boer. Having her kids took a toll on Mandy, and when Sonny and Rosie were still babies, she died. But, Sonny and Rosie made it through without their mother! We sold all of our other goats except Rosie!!!!!!! Dad is thinking about breeding her!!! So, maybe by the fall we will have little baby goaties!
